Our Bountiful Backyard

For the most part, we have been very fortunate with our garden and fruit and nut trees this year. So far we have enjoyed zucchini, apples, peaches, green peppers, tomatoes, lettuce, radishes, beets, cucumbers, broccoli, apricots, strawberries, lemons, limes, carrots and a few more goodies I am forgetting at the moment. Onions and watermelons are coming soon. Andy also planted pumpkins and they are already turning orange. I will have pictures of that in a future post. Andy has quite the green thumb and the girls are learning quickly.

We have had an abundance of cucumbers this year. While our favorite way to eat them is fresh with a little salt or on a salad, we couldn't keep up. I found a fantastic recipe for refrigerator pickles. The first batch came out a little salty, but very crispy. I am going to try again using about 1/2 of the amount of salt and see what happens. They were still edible, but better if we rinsed them first. Not too bad for the first attempt though.

This morning we were all shucking almonds, even Carson. He was a big helper. His favorite way to help out is to take them out of the bucket and toss them on the ground-haha. He had a ball playing with them and fortunately, the girls don't mind picking up after him. The girls are great helpers as well. They love to pick them and then we chat while we shuck. Five year olds are such great conversationalists! We had a great discussion all about composting. Sarah loves insects and we were talking about how she is like the character in a book we read called "Insects are My Life." Whenever there was a bug crawling around, Maddie and I would duck and cover and Sarah would casually look at it and say, "Bugs are my life" and go back to shucking. We were all in stitches laughing. What a beautiful morning!
